Sean Marsh, the 37-year-old owner/chef, is from Florida where he studied sustainable agriculture. But he decided to become a chef. He moved to the Algarve where he worked at Michelin star restaurants such as BonBon and Vilavita.
At Ato bistro Faro you can eat Michelin-quality starters and desserts for only 6 euros! Incredibly tasty and inexpensive! Driven by passion for food. Go there!
6 months ago he decided to start his own restaurant, in the historic center of Faro. Ato, which means Act in Portuguese. A good action in my opinion, haha
Ato is a lovely little restaurant in a historic building with blue tiles but modern lighting. And modern music, from his own playlist. The small kitchen is open, so you can see the chef at work. There are 22 seats and only 3 people working; Chef Sean, the kitchen assistant dishwasher and the lovely waitress.
I start with a glass of wine. Very pure white wine from Lisbon. Almost a little cloudy. Delicious!
The homemade bread tastes great!
Then a delicious starter of eggplant with roasted red pepper on toast, nice deep flavors (6 euros)
Main: gnocchi with oyster mushrooms, and leeks. Delicious, subtle and totally good! (18 euros)
Fantastic dessert with warm pear and grated almond and hibiscus (6 euros). Top! This is how dessert should be. Small and fine.
I'm enjoying! Refined flavors, Michelin level, without the high prices, without too many waiters who continuously refill your glass after each glass. Where you lose an entire evening. Or where you eat too much, because the chef doesn't understand that if you do 10 courses, it really has to be very small dishes.
At Sean I would like to eat good food once a week, simple dishes made special, where you remember what you eat, that it remains recognizable, instead of vague mousjes.. The menu changes every month.
I was shocked by the bill. That couldn't be right.. 41.50 euros only, for 3-course Michelin food, including water and wine!
I expect that Sean will soon receive the Michelin Bib Gourmand award, for the unique relationship between top food and its low prices.
